Kim’s philosophy is simple – the best possible ingredients prepared with classic simplicity. Seafood direct from the Markets, the Great Barrier Reef and Yamba, free-range livestock and game from Oxley Island and of course oysters from the Hawkesbury, Port Stevens and the Shoalhaven.

Over the years Kim has built up a community of Australian and international friendships who share his passion for great food. This gives Kingfish the inside line to fisherman from Cairns to Batemans Bay. And farm fresh meats, produce and cheeses from Northern NSW to Northern Spain. Everything is of the highest quality including Cintra estate Australian olive oil, vinegars, verjuice and vina cotto.

To match the quality of our produce, Kingfish has a vintage crop of local and overseas wines – and like our meals they’re reasonably priced too. Kim has been known to enjoy the odd glass or two with his footy playing mates and along the way discovered some excellent wines here and in Europe.
